- 1 ounce Thistle Hill Cheese Co.’s White Stilton with Mint Chocolate Chip
- Heavy cream and half-and-half, as needed
- Salt, to taste
- ¾ ounce Tempus Fugit Crème de Cacao
- ¾ ounce Tempus Fugit Crème de Menthe
- Freshly grated nutmeg, for garnish
Using an immersion blender, purée the mint chocolate chip Stilton with heavy cream and half-and-half until the mixture is creamy and smooth. The cream should not be too thick. Add salt to taste.
Combine Stilton cream with next 2 ingredients in cocktail shaker, add ice, shake vigorously to blend and double strain into a coupe glass. Garnish with freshly grated nutmeg.
