Kiss My Grasshopper Cocktail

From The Red Pony's bartender, Clark Moore. This cockail features Thistle Hill Cheese Co.’s White Stilton with Mint Chocolate Chip, which can be found at DeCicco's.

Ingredients

  • 1 ounce Thistle Hill Cheese Co.’s White Stilton with Mint Chocolate Chip
  • Heavy cream and half-and-half, as needed
  • Salt, to taste
  • ¾ ounce Tempus Fugit Crème de Cacao
  • ¾ ounce Tempus Fugit Crème de Menthe
  • Freshly grated nutmeg, for garnish

Instructions

Using an immersion blender, purée the mint chocolate chip Stilton with heavy cream and half-and-half until the mixture is creamy and smooth. The cream should not be too thick. Add salt to taste.

Combine Stilton cream with next 2 ingredients in cocktail shaker, add ice, shake vigorously to blend and double strain into a coupe glass. Garnish with freshly grated nutmeg.
